Mango Topped Lamb Chops
8 lamb loin chops
Salt and freshly ground pepper, to taste
1/2 cup finely chopped parsley
2 mangoes peeled, seeded and diced
1/2 teaspoon cinnamon
Directions
Preheat the grill to high. Season the chops with salt and pepper and grill each side for 6 - 8 minutes depending on thickness. Remove from the grill just before they are cooked. Sprinkle parsley evenly over chops, then arrange the mango slices on top. Sprinkle with cinnamon and place under grill again. Cook until the mango browns slightly. Serves 4.
